Healthy Apple Crumble

Healthy apple crumble

This apple crumble is so easy to make and needs very minimal ingredients. It’s quick and healthy, refined sugar free and vegan friendly. Most importantly it’s kids approved. What else could a mum ask for?
Serve it hot or cold, with custard or with coconut yoghurt, it goes down like a treat.

Ingredients:

For the fruit layer:
- About 7 apples
- 2 tsp. cinnamon
- 4 tbsp. maple syrup (or more to your taste)
- 1 tbsp. cornflour
 
For the topping:
- 2 cups oats
- 1 cup chopped walnuts
- 1 tsp. cinnamon
- 2 tbsp. melted coconut oil
- 2 tbsp. maple syrup
Method:
Preheat the oven to 180 C.
Remove the cores from the apples and cut them into small pieces. I personally don’t peel the apples, but you could if you wanted to. Place the apples in the baking dish and mix it with the cinnamon, maple syrup and cornflour. Bake it in the oven for about 10-15 minutes until the apples start to soften and they exude some juices. 
 
While it is in the oven, make the topping.
Place the topping ingredients in a bowl and mix nicely.
 
Once the apples are soft, remove from the oven and layer the topping evenly, then gently press it down with a spatula. Bake it for another 20 minutes, until the top is nicely browned.
Serve and enjoy!
