Healthy banana bread recipe

It`s World Baking Day and I love baking!
I thought I would share one of my usual “throw it all together in 2 minutes” healthy recipes.
I had a few spotty bananas, so happy days.
Pay attention to the main ingredient! The topping guys. Just saying… 😊
Ingredients:
- 3 mashed bananas
- 1/3 cup extra virgin olive oil
- ½ cup maple syrup
- 2 eggs
- ¼ cup water or (nut) milk
- 1 tsp. vanilla extract
- Pinch of salt
- 1 tsp bicarbonate of soda
- Big pinch of cinnamon
- 2 cups whole wheat flour 
Green Fingers Signature Granola
Method:
-Preheat the oven to 180 C
-Mix all the ingredients in a bowl except for the granola.
-Pour the batter into a silicone loaf pan or grease one with a tbsp of olive oil.
-Sprinkle the granola on the top.
-Bake for about 40 minutes or until the knife comes out clean.
Let it cool in the pan for at least 10 minutes or it will most likely fall apart a bit….speaking from experience here haha. Greedy mama.
